Yi Restaurant at Raffles Hotel Singapore is known for Chinese dining entwined with a contemporary culinary approach. They have recently refreshed their menu which is presented by MasterChef Jereme Leung conceptualised together with Executive Chinese Chef Yap Poh Weng.

We started with Chef Leung’s favorite drinking snacks Deep-Fried Marinated Pork Belly with Black Garlic and Pan-fried Cuttlefish Cake On Quinoa With Spicy Tangy Salsa.

Next up are the Appetisers and Cold Dishes Hokkaido Scallops On Cordyceps Flower & Spinach Rolls in Spicy Sesame Sauce, Sliced South African Abalone & Vegetarian Abalone, Stem Lettuce with Sichuan Green Pepper Dressing and Crispy Pork Belly with Tribute Vegetable and Yellow Mustard.

Soup wise, we had the Double-boiled Chicken Soup with Fish Maw, Bamboo Fungus & Matsutake Mushroom served in Coconut. While for Mains, there were the Iberico Pork Roll Wrap with Crispy Seaweed served with Pickled Sliced Green Mango & Homemade Speciality Sauce and the highlight of the night, Poached Rice with Assorted Seafood in Shrimp Broth served with Crispy Brown Rice.

We ended off with desserts Double-Boiled Hokkaido Milk & Ginger Pudding with Butterfly Pea Bird’s Nest as well as Steamed Red Dates & Coconut Cake.
