The buffet showcases an abundant spread of heritage-inspired creations alongside Peppermint’s signature international buffet, including Flame-Grilled Lamb Leg with Buah Keluak and Wing Bean Salad, Regionally Sourced Grilled Fish with Urban Farm Herbs in Assam Broth, and a selection of specially created dishes developed by culinary students from ITE in close collaboration with Executive Chef Chan Tuck Wai and Chef de Cuisine Leon Yee.
Highlights from this collaboration include Charcoal Roasted Wagyu Oxtail with Fermented Soybeans and Crispy Belacan Chicken Thigh, complemented by Peppermint’s renowned seafood-on-ice selection, Josper grilled meats, the Signature Seafood and Lobster Laksa Tower live station.
Adding to the experience is the highly anticipated return of Peppermint’s seasonal durian offering, where diners can indulge in free-flow fresh durians, deshelled to order or grilled over the fire for an even richer flavour during Thursday to Saturday dinner sessions.
