This August, Katong and Bintan come together at Hotel Indigo Singapore Katong in a culinary collaboration celebrating two distinctive neighbourhoods and the 10th anniversary of Baba Chews. Available from 1 to 16 August 2026, Across the Straits – Katong x Bintan is a six-course four-hands menu created by Chef Huang Jiaxing of Baba Chews and Chef Erik Gremmer, Cluster Executive Head Chef of Hotel Indigo Bintan Lagoi Beach.
The experience begins with the Katong Kiss, a bright, floral and citrusy non-alcoholic welcome drink inspired by coastal sunsets and familiar Singapore flavours. A bold Singapore Chilli Crab Bao is paired with Bintan Bamboo Clams, bringing two flavours from across the straits together in a playful opening. This is followed by Bintan Ikan Asam Pedas, a vibrant hot-and-sour fish dish capturing the warmth, depth and freshness of Bintan’s coast, before Sate Kambing presents tender lamb satay charred with fragrant Marangi spice and served with bold condiments.
At the heart of the menu is the Nasi Lemak Risotto, where Baba Chews’ signature coconut risotto carries the soul of nasi lemak and is paired with tiger prawns and turmeric squid. The Beef Cheek Rendang then celebrates 10 years of Baba Chews with a deeply spiced, slow-braised expression of Peranakan flavours.
The experience concludes with a Gula Melaka Burnt Cheesecake, where nostalgic Southeast Asian sweetness meets a contemporary finish.
