Dolce Vita at Mandarin Oriental Singapore , invites diners to embark on a gastronomic journey with A Taste of Italy with Chef Davide Borin, taking place from 11 to 17 August 2025. Known for his comforting Italian classics crafted with traditional recipes, Chef Davide from Essenza, Mandarin Oriental Singapore Muscat , will present an exclusive menu that celebrates the essence of authentic Italian cuisine.


Guests can savour a Three-Course Lunch at $58 or indulge in the Five-Course Dinner at $158. Set against Dolce Vita’s sophisticated yet relaxed setting, diners can unwind in the chic main dining area while catching a glimpse of the chefs at work through a feature wall with vertical windows.


The Five-Course Dinner unfolds with Bruschetta “Sciuè Sciuè” of sourdough bread, heirloom tomato and extra virgin olive oil; followed by Peperoni ’Mbuttunati, cod fish stuffed bell peppers from Napoli with mint and capers guazzetto.


Next is the signature Raviolone Al Tartufo, a homemade raviolo with runny egg yolk, ricotta and black truffle sauce, then Sgroppino Al Limone, prosecco and lemon sorbet whipped tableside.


For the main course, choose between Branzino In Crosta Di Pane, sea bass in bread crust with white asparagus and salmon roe, or Filetto Di Manzo “Al Camino”, Black Angus beef tenderloin smoked on herbs with wilted chard and mashed potato.


The experience concludes with Pistacchiomisu, a pistachio twist on tiramisu, alongside Petit FOURS Hazelnut bigné, Raspberry meringues, and Lemon capri bonbon.
