Immerse in a botanical dining experience at Garden@One-Ninety in Four Seasons Hotel Singapore! The cool shelter of the terrace is an extension of One-Ninety Bar that is inspired by the nearby Singapore Botanic Gardens, a UNESCO World Heritage Site. Amidst the lush greenery, one can delight in a specially curated menu by Chef de Cuisine Pierre Barusta that is keenly focused on spotlighting market-fresh produce.
Garden@One-Ninety offers a wide selection of creative, wholesome plant-based cuisine. For Starters, there are the likes of Summer Rolls with Green Mango, Papaya and Avocado, Vietnamese Salad with “Nuoc Mam” Sauce and Prawn Crackers, David Herve Fine Oyster no 3 with Ponzu and Wasabi Pickles and Hamachi Tiradito with Daikon, Jalapeno and Citrus Soy.Entrees wise, we had Wagyu Beef Pho Soup with Rice Noodles and Hoisin Peanut Sauce as well as the Pan Seared Seabass with Kailan Bean Sprout, Quail Egg and Laksa Broth.
Bar manager and mixologist Gabriel Carlos of One-Ninety bar lends his talent and craftsmanship with Botanical cocktails and Zero Proof Cocktails to go with the dishes. Featured here is the Theatrum Botanicum, a mixture of Arc Botanical Gin, Lillet Blanc Vermouth, Empirical Spirits Plum, Herbs, Lemon, Soda and Scrappy’s Lavender Bitters and Rhapsody, a concotion prepared with Seedlip Spice 94, Clarified Lemon, Roselle and Strawberry Shrub and East Imperial Ginger Beer.
The dainty desserts by Chef Audrey Yee was a lovely conclusion to our meal. Shown here are her creations Vanilla-Soy Panna Cotta and Anjou Pear Frangipane Tart.
