The feast begins with Xin’s hearty Double-boiled Crocodile with Loquat Soup, a dish infused with a deep umami flavor and known for its lung-nourishing properties. Next, the Steamed Crocodile Paw with Sliced Mushroom and Chinese Preserved Ham offers a nuanced balance of flavors, with tender crocodile paw steamed to perfection atop sliced mushrooms and Chinese preserved ham.
