From now to 9 August 2026, award-winning buffet restaurant Edge Restaurant in Pan Pacific Singapore celebrates Singapore’s 61st birthday with a decadent Flavours of the Lion City buffet experience available daily. Specially curated by Executive Chef Andy Oh and his Culinary Team, the lavish spread pays tribute to Singapore’s rich and diverse culinary heritage through hearty local favourites such as Teochew-style Steamed Local-farmed Hybrid Grouper, Braised Kong Bak with Lotus Leaf Bun, Poached Local-farmed Xiao Bai Cai with Egg White Crab Meat Sauce, Wok-fried Hokkien Prawn Noodle in Opeh Leaf and Fried Rice with Crispy Pork Lard. The feast continues with signature creations including Baked Local-farmed Barramundi with Chilli Pesto and Cilantro, Steamed Pacific Jumbo Clam in White Wine and Garlic, Smoked Pork Belly with Caramelised Pineapple Sauce and Pot Pie Lamb Stew.
Available exclusively during dinner, the charcoal-barbecued live station features Marinated Giant Squid, Local-farmed Vannamei Prawn and Local-farmed Silver Pomfret, complemented by Edge’s Signature Salt Baked Crab, Giant Cast Iron Pan-fried Oyster Omelette and Barbecued Sambal Stingray. Guests can end the celebration on a sweet note with nostalgic favourites such as Edge’s Signature Durian Pandan Cake and Chempedak Cake, alongside playful creations including Milo Pani Puri and Chocolate Chilli Padi Tartlet.
