
Hai Tien Lo , the award-winning Cantonese restaurant in Pan Pacific Singapore , presents a highly anticipated one-day-only four-hand collaboration between Chef Ang Song Kang of MICHELIN-starred Chef Kang’s Private Dining and Chef Edden Yap, Executive Chinese Chef of Hai Tien Lo. Chef Kang is renowned for his mastery of wok hei and refined Cantonese techniques. In 2014, he opened Chef Kang’s Private Dining, an intimate three-table restaurant that earned One MICHELIN Star in 2017, cementing his reputation in Singapore’s dining scene. Joining him is Chef Edden Yap, who brings over three decades of culinary experience across renowned kitchens in Macau, Dubai, and Singapore, including award-winning restaurants such as Lotus Palace at The Parisian Macao and DIVA at W Macau.
The seven-course set menu created for this exclusive collaboration consists of Cold Appetiser Platter featuring Jasmine Tea Jelly with Sea Urchin, Peking Duck Skin with Pomelo and Caviar, and Chinese Lettuce with Scallion Oil; Creamy Almond Fish Soup with Australian Scallop, Korean Abalone, and Sea Whelk; Steamed Yellow Croaker Belly with Pork Patty and Salted Egg by Chef Kang; Braised Australian Lobster with Basil Leaf, Brandy, and Garlic by Chef Edden; Wok-fried Diced Black Angus Beef with Pan-fried Foie Gras by Chef Kang; Crispy Ibérico Pork Belly with Shrimp Paste; and dessert of House-fermented Curd with Tropical Harvest Fruits and Dried Tangerine Peel Egg Tart.
The set menu is priced at $238++ per person, with an optional three-hour free-flow of Taittinger Brut Réserve at $90++ per person.
