Hailing from Jinjang, Kuala Lumpur, Chef Edden brings with him over three decades of experience that span from humble beginnings in hawker stalls to leadership roles in acclaimed Chinese restaurants across Dubai, Macau, and China. Rooted in tradition yet innovative in approach, Chef Edden is committed to honouring the timeless artistry of Cantonese cuisine while reimagining it through modern techniques and inspirations drawn from global culinary influences.
At Hai Tien Lo , Chef Edden leads a team dedicated to sustainability, craftsmanship, and authenticity. From daily house-made stocks and hand-crafted dim sum to butchering meats in-house and creatively repurposing ingredients for sauces, his philosophy emphasizes both quality and responsibility. Working alongside Assistant Chinese Chef Yong Foh Shin, Dim Sum Chef Ho Kam Fai, and Restaurant Manager Frankie Lean, he aims to elevate Hai Tien Lo’s standing as a homegrown Singapore culinary icon.
