Amara Singapore proudly presents the second edition of its celebrated “Local Legends” series from now to 17 April, in collaboration with Chef Damian D’Silva of Rempapa.
Held at Café Oriental, this culinary showcase honours Singapore’s rich and diverse gastronomic heritage. Chef Damian, often referred to as the “Grandfather of Heritage Cuisine,” brings his Peranakan and Eurasian roots to the table, creating a menu that reflects the soul of Singapore’s multicultural food culture.
Guests can look forward to a thoughtfully crafted lineup of heritage-rich dishes that celebrate nostalgic flavours with a modern sensibility. Highlights include the tangy Homemade Acar, zesty Kedondong Salad, and traditional Chi Pow Kai (paper-wrapped chicken). Signature mains such as Ayam Buah Keluak, Eurasian Lamb Dhalcha, Brinjal Pacheree, and Eurasian Grilled Snapper bring bold, comforting flavours rooted in tradition. The experience rounds off with a delightful Assorted Heritage Kueh platter.
